Use a food thermometer and follow official minimum internal-temperature guidance.

Ground beef, pork, veal or lamb

160°F / 71°C

Measure in the center of the patty with a food thermometer.

Ground chicken or turkey

165°F / 74°C

Ground poultry requires the higher minimum internal temperature.

Thermometer tips

Insert the thermometer into the thickest part. For thin patties, insert from the side so the sensing area reaches the center. Appearance and color alone are not reliable indicators of safety.
